Michelin-starred Sushi Kanesaka celebrates seasonal flowers and Japanese craftsmanship with Aoyama Flower Market

Michelin-starred restaurant Sushi Kanesaka has partnered with Aoyama Flower Market from the 16th until the 20th June for a five-day floral installation celebrating the arrival of the summer solstice. Bringing together two renowned Japanese institutions united by a deep appreciation for craftsmanship, hospitality, and the changing seasons, the collaboration explores the shared cultural values that connect floristry and Edomae sushi. Inspired by the beauty of early summer, the restaurant will be transformed through a series of bespoke floral installations.

Founded in Tokyo in 1989, Aoyama Flower Market is renowned for its distinctive approach to floristry and its philosophy of living alongside flowers, celebrating their role within everyday life. Following the opening of its first international store in Paris in 2015, the brand expanded to London with a location in Selfridges in 2018. Throughout the collaboration, this philosophy will be brought to Sushi Kanesaka through arrangements inspired by the summer solstice and the blooms that mark this fleeting moment in the calendar. Thoughtfully curated floral compositions will respond to the rhythm of the season while complementing the restaurant's understated design and intimate dining experience.
Sushi Kanesaka, the Michelin-starred restaurant at 45 Park Lane from acclaimed chef Shinji Kanesaka, brings the traditions of Edomae sushi to one of London’s most intimate dining experiences. Awarded a Michelin star within its first year and continuing to hold this distinction, the restaurant is led by Head Chef Hirotaka Wada, whose seasonal omakase menus celebrate precision, craftsmanship and hospitality. Guided by a deep respect for seasonality and the finest ingredients, Sushi Kanesaka offers a dining experience that reflects the same appreciation for nature and fleeting beauty that sits at the heart of Aoyama Flower Market’s philosophy.

Bringing the beauty of early summer into every corner of the restaurant, guests entering Sushi Kanesaka will encounter a dining room subtly reimagined through flowers. Sculptural arrangements will frame the omakase counter, while delicate floral displays will accompany guests throughout the dining experience. An additional stem installation will introduce moments of contrast against the restaurant’s minimalist interiors, while the private dining room will feature its own arrangements, offering a more intimate interpretation of the collaboration.
Reflecting the shared values of both brands, the installation brings together the precision of Edomae sushi and the artistry of Japanese floristry. At Sushi Kanesaka, this is expressed through the traditions of Edomae sushi and the careful sourcing of ingredients, while at Aoyama Flower Market it is reflected in blooms selected at the height of their natural beauty. Together, they offer a thoughtful exploration of how culinary and visual experiences can be shaped by the changing seasons.
Guests dining during the collaboration will receive a bespoke bouquet created by Aoyama Flower Market. Inspired by the colours and character of the season, each bouquet will offer a lasting reminder of the collaboration beyond the dining experience.
