The Unexpected Ibiza: Where the White Isle Saves Its Best for Last

There is a particular kind of magic to Ibiza in October. The heat has softened, the tempo of high summer begins to loosen its grip, and the island seems to exhale. Yet this is not the moment Ibiza goes quietly into winter. Quite the opposite. As the crowds thin, the final parties gather momentum, tables become a little easier to secure and devoted island regulars arrive for one last taste of summer.



On Playa d’en Bossa, The Unexpected Ibiza Hotel is perfectly positioned for this final act. The adults-only property sits directly beside Ushuaïa, placing it at the heart of Ibiza’s famous nightlife scene while offering a polished retreat of its own. With 181 rooms and suites, several outdoor pools, private Jacuzzis and direct access to the beach, the hotel combines contemporary glamour with the easy hedonism for which the island is known.



But what makes The Unexpected particularly suited to an autumn escape is the freedom to create your own Ibiza. A morning can begin with movement, progress to oysters beside the hotel’s signature red pool, drift towards a long lunch on the sand and end with cocktails, ambitious cuisine and music. There is no prescribed rhythm.


We began at the Oyster & Caviar Bar, where the setting does much of the seduction before the first plate arrives. Beside the striking vermillion pool, the menu moves between oysters, caviar, sushi, sashimi and seafood, making it an ideal place for a leisurely lunch or late afternoon aperitif. It is Ibiza luxury without unnecessary ceremony, particularly when accompanied by a chilled cocktail and Mediterranean sunshine.



For lunch, The Beach, Unexpected Ibiza shifts the mood entirely. Here, the sand is beneath your feet, with the menu focused on Mediterranean flavours, seafood and rice dishes. The atmosphere is relaxed and distinctly Balearic, making it difficult to imagine a better setting for an unhurried afternoon. On 4 October, The Beach will host The Sunrice, a paella showcooking experience pairing an exclusive menu with its seaside setting. The set menu starts from £43 per person.


It is tempting to stay put, of course. Yet one of The Unexpected’s pleasures is that dinner can become a journey through several different interpretations of contemporary Ibiza.



At Gordon Ramsay’s Hell’s Kitchen Ibiza, the atmosphere is theatrical from the outset. Ramsay’s recognisable signatures, including Beef Wellington and Sticky Toffee Pudding, sit alongside island-inspired dishes such as shrimp aguachile, short rib croquettes and Hell Fire scallops. The result is energetic and playful, with the open kitchen adding to the sense that dinner is part of the evening’s entertainment.


Then there is StreetXO Ibiza, the irreverent dining concept from chef Dabiz Muñoz. Expect bold flavours, inventive combinations and theatrical presentation, with global street food influences colliding with highly technical cooking. It is exactly the sort of dining experience that feels at home in Ibiza, where conventional rules have rarely held much sway.


The concentration of restaurants and experiences is part of what makes The Unexpected interesting. It is not simply somewhere to sleep between Ibiza’s headline moments. The hotel has become a destination in its own right, where dining, wellness, fashion, entertainment and nightlife converge.


And October brings a final burst of energy. On 3 October, The After Workout Club will see OWN Studio lead guests through Pilates, running or functional training before breakfast, drinks and a live DJ set. Starting from £20 per person, it is wellness with a distinctly Ibiza twist.


The following day, The Sunrice brings guests to The Beach for its paella experience. Then, on 11 October, the gastronomic finale arrives at Minami Japanese Restaurant with The Real Omakase, an immersive experience in which the chef takes the lead with a curated selection of sushi and Japanese specialities.


That same evening, StreetXO Ibiza hosts its Closing Party, with DJ Pedroche making her official debut. Guests can enjoy chef-curated dishes and drinks from 20:30 to 22:30 before the party continues into the night. With limited availability, tickets are priced at £43 per person.


It feels fitting that food and music should provide the closing notes. Ibiza has always understood that a great meal is rarely just about what is on the plate, and that a night out is remembered through its soundtrack, setting and company.


At The Unexpected, that philosophy has found a suitably contemporary address. Days can be spent barefoot by the sea, afternoons beside a vermillion pool and evenings moving between ambitious restaurants and legendary nightlife.



When October arrives, the island is still warm, the sea is still inviting and the final parties are preparing to begin. Sometimes the most unexpected time to visit Ibiza is precisely when everyone else thinks the party is over.
