Recipe: Hankies - Keema Mattar


Tapas meets traditional Delhi street food at Hankies, a stylish West End eatery inspired by the classic hand spun roti, cooked on a searing Roomali Tawa and delicately folded into the eponymous ‘hankies’. Hankies is an up scale take on authentic Indian street food, it evokes the heady scents and sultry evenings of the sub-continent in a distinguished setting.


Bring a taste of India home by recreating one of their most popular dishes, Keema Mattar.


Ingredients


  • 4-5 tbsp Oil

  • 1 tsp Cumin Seeds

  • 2 Bay leaves

  • 4-5 Green Cardamoms

  • 10 Cloves

  • 4 Onions, finely chopped

  • 1 tbsp Ginger Paste

  • 1 tbsp Garlic Paste

  • 5 Green Chillies, chopped

  • 1 Cup Petit Pois

  • ½ tsp Turmeric Powder

  • 1 tbsp Red Chilli Powder

  • 1 tbsp Coriander Seed Powder

  • 1 tbsp Garam Masala

  • 3 Medium Tomatoes, chopped

  • 1 tbsp Butter

  • Mint Leaves, finely chopped

  • Coriander Leaves, chopped

  • 750 grams Mutton, minced

  • Salt to taste

  • 1 cup Milk

Method


1. Heat oil in a pan; add cumin seeds, green cardamoms, cloves, onions, ginger paste, garlic paste, sauté the garlic until the raw smell goes off

2. Ass green chillies and sauté them for 2-3 minutes

3. Add turmeric, red chilli powder, coriander seed powder, cumin seed powder, garam masala, sauté them for a few seconds

4. Add tomato puree, mint leaves, coriander leaves, minced mutton, salt and mix well

5. Add petit pois

6. Now let cook for 20-35 minutes

7. Garnish with coriander leaves and mix
